So I've been on quite a fish kick lately, but this Teriyaki salmon is to DIE for.
2 heads of broccoli
1 bag of snap peas
1 piece of salmon
Yeri Yeri Teriyaki Marinade and Sauce (easier than making your own sauce)
1 cup of rice
Sauce for Veggies:
1/2 cup of chicken broth
4 teaspoons of gluten free soy sauce
2 tablespoons of hoisin sauce
2 teaspoons of sesame oil
2 tablespoons of cornstarch (the thicker you want the sauce the more you should add)
2 teaspoons of olive oil
2 cloves of garlic
Marinade your fish: Put Salmon into bag and generously coat the fish with the Marinade. Let it sit overnight to get full flavor.
Cook your vegetables: Boil your veggies in a large pot of boiling water (any type you like!)
Cook your rice
Create your veggie sauce: Whisk together the broth, soy sauce, hoisin sauce, sesame oil, and cornstarch. Add olive oil and garlic to a pan with the chopped veggies and sauce. Coat the veggies and cook until sauce is hot.
Grill your fish: Spray your grill with oil so fish will not stick and put Salmon on the grill for 10-15 min until fish is flaky
Take a scoop of cooked rice, top with cooked salmon and serve with vegetable mixture on the side! If you like spice add some Thai chili paste or Sriracha to your veggies and fish!!
