Honey Sriracha Roasted Carrots

Healthy sides are hard to come by, especially healthy AND quick sides. I really wanted to pair a side with my Asian Teriyaki Salmon (refer to my blog post of the recipe) and I wanted to try tri colored carrots!

Ingredients:

  • 1 Bag (or 2lbs) of Carrots

  • 1 T Honey

  • 2 T Sriracha

  • 2 T Olive Oil

  • 1/2 tsp Cayenne Pepper

  • 1/2 tsp Cumin

Directions:

  1. Toss the carrots in the mixture of the honey, sriracha, cayenne pepper, cumin and oil, and arrange in a single layer on a baking sheet

  2. Bake in a preheated 400F oven until cooked, about 30-40 minutes, turning once in the middle

  3. Serve!

**I Like to make two batches of the sauce and drizzle the cooked carrots after they come out of the oven again**
