Peanut Butter Protein Bars
Protein Bars are easy for a quick snack or an On The Go meal, but they are quite pricey when it comes to buying them. I eat protein bars ALL the time in between work and the gym, breakfast, and snacks. So what could be better than making your own?

Ingredients:
1/2 cup peanut butter
2 tablespoons coconut oil
1/8 cup honey
2 tsp vanilla extract
2 scoops of vanilla designer protein powder
1 cup quick oats
2 tablespoons chia seeds
2 tablespoons chocolate chips + 1 teaspoon coconut oil
1/3 cup dried craisins
1/3 cup unsweetened shredded coconut
1/4 cup chopped pecans/walnuts (optional)
Directions (Makes 10-12 bars):
Heat peanut butter, coconut oil, honey and vanilla in a saucepan over low heat and mix together
Remove from heat and combine with protein powder,oats, craisins, chopped nuts (optional), chia seeds, and coconut flakes. Place in a 7X9 inch pan lined with parchment paper
Add chocolate chips and coconut in a saucepan and place over low heat until melted. Drizzle over the tops of the bars.
Place in fridge for 1 hour before removing from pan and cutting into bars
