Pulled Pork Breakfast Potato Hash
This breakfast is one of my favorites! I combines all of my favorite foods into one amazing yummy dish. This dish combines two simple recipes. One for the pork hash, which is amazing on just about anything (I love eating it with Tacos!) and one for the breakfast portion.

For the pork (should make around 15-20 servings)
5 lbs Boneless Pork Shoulder or Country Rib with fat trimmed off
3 Tbsp Cumin or until pork is evenly coated
2 Tbsp Garlic Powder or until pork is evenly coated
1 Sweet Onion
Splash of Wine
1/4 cup of water
Salt and Pepper
Directions:
Trim fat off of the pork and chop onion
Add all ingredients to crock pot
Cook on high 3-4 hours, turn to low for 2-3 hours
Pulled Pork Breakfast Potato Hash Ingredients:
4 or 5 Medium Potatoes
1/2 Red Onion
2 Cups of the Pork
3-4 Eggs
1/2 Cup Shredded Cheese
Crushed Red Pepper
Salt and Pepper
Directions:
Peel and chop your potatoes into bite size cubes
Heat your skillet with oil and cook potatoes in skillet until golden brown. Add red onion, sprinkle with salt and pepper and continue to cook until the onion is soft.
Turn the heat to low and add pulled pork. Create small pockets with the pork in the potato hash to fit the eggs in. Carefully crack and egg into each pocket. Cover and let cook until the eggs are set.
Sprinkle with red pepper, cheese, and hot sauce (if you like spicy!)
