Spicy Sriracha Jalapeno Chicken

So I was craving something spicy, but wanted to put a healthy spin on it. The Spicy Jalapeno Chicken is full of flavor and super creamy without the added calories of a dish with full cream. You can add as little or as much spicy as you want (to be honest it could have been spicier and if I made it again I would add more sriracha)

Ingredients:

  • 1 Tbsp Sesame Oil

  • 1 pound Chicken Breast (cut into cubes)

  • 1 Tbsp Minced Garlic

  • 1 Tbsp Grated Ginger

  • 1 Tsp Soy Sauce

  • 3 Tbsp Sriracha

  • 1 Tsp Lemon Juice

  • 1 Jalapeno Chopped

  • 1 Tbsp Light Coconut Milk

  • 3 Tbsp Plain Greek Yogurt

  • Salt and Pepper

Directions:

  1. Heat Oil in a pan over medium heat

  2. Add the Chicken, Garlic, Ginger, Soy Sauce, Sriracha, Lemon Juice, Chopped Jalapenos, Salt, Pepper, and mix

  3. Cook for about 8-10 min or until chicken is fully cooked

  4. Add Greek yogurt and Coconut Milk

  5. Garnish with Jalapenos

  6. Serve!

**I served the chicken over quinoa, the extra sauce was to top the quinoa with!**
