Super Food Blueberry Muffins

Have you ever tried Kodiak Cakes Super Food Waffle and Flapjack Mix? Well... the company was nice enough to send me some mix to try for my blog! It has awesome ingredients in it, quinoa flour, chia seeds, and not to mention low fat and high in protein! You can make a ton of different types of goodies with this mix, but I chose to make some yummy blueberry muffins for a great "grab and go" breakfast for the week!

Ingredients for 12 Muffins:

  • 2 Cups Kodiak Cakes Mix

  • 1/4 Stick Butter softened

  • 1 Cup Blueberries

  • 1 Cup Almond Milk

  • 1/2 Cup Coconut Sugar (any sugar will do! or even agave or honey as a substitute)

  • 1 Tbsp Cinnamon

  • 1 Egg

Directions:

  1. Preheat oven to 350 Degrees

  2. Mix all ingredients together in a bowl and blend until smooth

  3. Fill greased muffin tins 3/4 way full

  4. Bake for 14-18 min or until golden brown

  5. Serve!
