Sweet Potato and Black Bean Veggie Burgers

Why go Veg???

Although I am not 100% vegetarian and I do love meat, going completely meat free a few days a week is not a bad thing! In fact, it has great added benefits! So why go Veg?

Well for one, you'll ward off disease, keep your weight down, live longer, and build strong bones!

Ingredients:

  • 2 tbsp Flaxseed meal (or any kind of flour) + 3 Tbsp of water

  • 1 large mashed Sweet Potato

  • 1/2 cup of cooked Quinoa

  • 1 (15z) can of Black Beans drained

  • 1/4 cup chopped Cilantro

  • 2 tsp Chili Powder

  • 1 tsp Cayane

  • 1 tsp Cumin

  • 1 tsp Oregano

  • 1 tsp Garlic Salt

  • 1 tbsp lemon juice

  • Salt and Pepper

Directions:

  1. Mix together Flaxseed meal and water

  2. Place all ingredients in a bowl and mix well. Make sure the beans are mashed up, but leave some whole ones for texture

  3. In a large pan, heat oil over medium/high heat

  4. Form the mixture into 6 patties

  5. When the skillet is hot, add the patties and cook on one side until crispy for about 5-7 min and carefully flip to repeat on other side

  6. Serve!

**I topped my burger with Boar's Head Chipotle Mayo, Avocado, Lettuce, and used a Trader Joe's Gluten Free Hamburger Bun (my favorite!!)**
