What can be better to get you up and moving in the morning than some good breakfast?! Toast is always yummy, but I wanted to spice things up a bit AND make it gluten free and healthy! All you need is a sweet potato and some creativity to top your toast!
1 Sweet Potato
Crushed Red Pepper
Oikos Zero Vanilla Yogurt
Granola (I used Kind Maple Quinoa Clusters with Chia Seeds)
Cut your sweet potato into slices about 1/4 inch thick
Place sweet potato slices into toaster oven or toaster
Toast for about 5-10 min depending on desired texture of sweet potato
