Lucinda's Famous Fried Rice

Ever since I was little my mom would always make the most amazing fried rice, so since moving out I think I have finally perfected the recipe. All credit goes to her though! If you want to make this healthier substitute the rice for cauliflower rice! It tastes just as good!


  • 2 Eggs

  • 4 Cups of Cooked Rice (cook the night before so it does not become too sticky)

  • 1/3 Cup of Soy Sauce (I used Gluten Free)

  • 4 Scallions diced

  • 1 cup of Carrots and Peas/Mixed Vegetables

  • 1/2 cup of chopped Onion

  • Salt and Pepper

  • 2 tbsp Maggi Sauce

  • 2 tsp of Sesame Oil

  • 1 tbsp of Oyster Sauce


  1. Cook eggs until softly scrambled or fried into a thin omelette and sliced. Set aside

  2. Heat wok or large pan; when hot add oil and cook the chopped onions until golden brown

  3. Add rice and stir-fry until rice is hot throughout

  4. Add Soy Sauce, Maggi Sauce, Sesame Oil, Oyster Sauce, and Vegetables; mixing well with the rice

  5. Fold in eggs and diced scallions

  6. Season to taste with salt and pepper

  7. Eat!
