Lucinda's Famous Fried Rice
Ever since I was little my mom would always make the most amazing fried rice, so since moving out I think I have finally perfected the recipe. All credit goes to her though! If you want to make this healthier substitute the rice for cauliflower rice! It tastes just as good!

Ingredients:
2 Eggs
4 Cups of Cooked Rice (cook the night before so it does not become too sticky)
1/3 Cup of Soy Sauce (I used Gluten Free)
4 Scallions diced
1 cup of Carrots and Peas/Mixed Vegetables
1/2 cup of chopped Onion
Salt and Pepper
2 tbsp Maggi Sauce
2 tsp of Sesame Oil
1 tbsp of Oyster Sauce
Directions:
Cook eggs until softly scrambled or fried into a thin omelette and sliced. Set aside
Heat wok or large pan; when hot add oil and cook the chopped onions until golden brown
Add rice and stir-fry until rice is hot throughout
Add Soy Sauce, Maggi Sauce, Sesame Oil, Oyster Sauce, and Vegetables; mixing well with the rice
Fold in eggs and diced scallions
Season to taste with salt and pepper
Eat!
