Simple Sweet Potato Fritters

Sweet Potatoes are so nutritious! One medium sweet potato will provide well over 100% of your daily needs for vitamin A, as well as 37% of vitamin C! These cakes are not fried and have no breading either to keep them as healthy as possible. So delicious you'll need to hurry and get shredding your potatoes!


  • 1 Large Sweet Potato

  • 2 Eggs

  • 1/2 tbsp Paprika

  • 1/2 tbsp of Cayenne Pepper

  • 1 tsp of Chile Powder

  • 1 tsp of Cumin

  • Salt and Pepper


  1. Grate your sweet potato using the larger holes in your grater

  2. Combine shredded sweet potato with two eggs, Paprika, Cayenne, Chile Powder, Cumin, Salt and Pepper

  3. Heat your pan on high heat with olive oil

  4. Make patties with about 1/4 cup of sweet potato mixture and place in pan, cooking each side for 3-4 min or until crispy and golden

  5. Serve

**I served my cakes with a 50/50 spinach and baby kale mixture tossed in lemon juice and olive oil with a side of avocado topped with red pepper**
