Southwest BBQ Salad with BBQ Ranch Dressing

Everyone loves a good Southwestern salad, or at least I know I do. This healthy salad is great for Lunch or Dinner and has an amazing southwestern kick! I love the mixture of greens and protein. Great for a Gluten Free option or make it vegetarian by loading up on beans and omitting the chicken!

Ingredients (4 servings):

  • For the BBQ Grilled Chicken:

  • 2lbs of Chicken

  • Olive Oil

  • Salt and pepper

  • 1 tsp Garlic Powder

  • 2 cups of your favorite BBQ Sauce (I used Heinz Kansas City BBQ Sauce)

  • 1 Lime

  • 2 tbsp Agave or honey (I used agave)

  • 1 tbsp Hot Sauce

  • For the Salad:

  • 1 bag of Romaine Lettuce

  • 1 can of Black Beans

  • 1 can of Roasted Corn

  • Shredded Cheese

  • Turkey Bacon

  • Baby Tomatos sliced in half

  • Chopped Red Onion

  • 1 Avocado

  • Jalapenos

  • For the Dressing:

  • 1 cup of BBQ sauce

  • 1/2 cup of Ranch


  1. Marinade the chicken: Season the chicken with salt, pepper, and olive oil to taste. In seperate bowl mix BBQ sauce, hot sauce, honey, lime and garlic powder together

  2. Prepare the salad: Chop your romaine, onion, avocado, tomato, and jalapenos. Add black beans, corn, and cooked turkey bacon to the mixture

  3. Make Dressing: Mix 1 cup of BBQ sauce with 1/2 cup of Ranch

  4. Cook your chicken:When ready to grill, heat grill to high. Oil grates and add chicken. Baste with marinade and grill until charred, 8 minutes per side for breasts, and 10 to 12 minutes per side for legs

  5. Top salad with 1/2 a breast of chopped chicken and dressing

  6. Serve!
