Southwest BBQ Salad with BBQ Ranch Dressing
Everyone loves a good Southwestern salad, or at least I know I do. This healthy salad is great for Lunch or Dinner and has an amazing southwestern kick! I love the mixture of greens and protein. Great for a Gluten Free option or make it vegetarian by loading up on beans and omitting the chicken!

Ingredients (4 servings):
For the BBQ Grilled Chicken:
2lbs of Chicken
Olive Oil
Salt and pepper
1 tsp Garlic Powder
2 cups of your favorite BBQ Sauce (I used Heinz Kansas City BBQ Sauce)
1 Lime
2 tbsp Agave or honey (I used agave)
1 tbsp Hot Sauce
For the Salad:
1 bag of Romaine Lettuce
1 can of Black Beans
1 can of Roasted Corn
Shredded Cheese
Turkey Bacon
Baby Tomatos sliced in half
Chopped Red Onion
1 Avocado
Jalapenos
For the Dressing:
1 cup of BBQ sauce
1/2 cup of Ranch
Directions:
Marinade the chicken: Season the chicken with salt, pepper, and olive oil to taste. In seperate bowl mix BBQ sauce, hot sauce, honey, lime and garlic powder together
Prepare the salad: Chop your romaine, onion, avocado, tomato, and jalapenos. Add black beans, corn, and cooked turkey bacon to the mixture
Make Dressing: Mix 1 cup of BBQ sauce with 1/2 cup of Ranch
Cook your chicken:When ready to grill, heat grill to high. Oil grates and add chicken. Baste with marinade and grill until charred, 8 minutes per side for breasts, and 10 to 12 minutes per side for legs
Top salad with 1/2 a breast of chopped chicken and dressing
Serve!
