Sweet Potato Toast

What can be better to get you up and moving in the morning than some good breakfast?! Toast is always yummy, but I wanted to spice things up a bit AND make it gluten free and healthy! All you need is a sweet potato and some creativity to top your toast!

Ingredients:

  • Toast:

  • 1 Sweet Potato

  • Toppings:

  • Avocado

  • Crushed Red Pepper

  • Chia Seeds

  • Oikos Zero Vanilla Yogurt

  • Blackberry Jam

  • Granola (I used Kind Maple Quinoa Clusters with Chia Seeds)

  • Almond Butter

  • Shredded Coconut

  • Cocoa Nibs

Directions:

  1. Cut your sweet potato into slices about 1/4 inch thick

  2. Place sweet potato slices into toaster oven or toaster

  3. Toast for about 5-10 min depending on desired texture of sweet potato

  4. Top with different ingredients!
