Cranberry Apple Galette
Happy Thanksgiving! Feeling extra thankful today for family, friends, and food of course! I've been blessed to be able to spend a few days back at home in Michigan with my family for the holidays.
Galette is a French term used for "free form crusty cakes". They make an easy and tasty type of "pie" that is a Thanksgiving and Holiday staple. I am a big fan of apples and cranberries, so I decided to use those for my main fruits in my Galette. My mom and I actually took a pie making class in the fall, so I learned a thing or two about making the crust that I can't wait to share!

Ingredients for the Dough:
1 1/4 Cups (6 1/4 ounces) unbleached all-purpose flour
2 Tbsp granulated sugar
1/2 tsp sea salt
1 stick (4 ounces) cold, unsalted butter- cut into 1/2 inch cubes
3-4 tablespoons ice water
Directions:
Place flour, sugar, and salt in the food processor and pulse
Cut the butter into the flour until the butter is the size of a pea
Slowly add ice water, 1 tbsp at a time into the flour mixture and pulse the food processor until large clumps form
The dough is done when enough water has been added to allow the dough to hold together
Form a ball with the dough and flatten into a disk
Cover in plastic wrap and refrigerate for 30 mins
**You may need to add more than 4 tbsp of water depending on how dry the air is**
Ingredients for the Gallete:
1 recipe of pie dough (included above)
4 medium Honeycrisp/ Granny smith apples peeled, cored, and thinly sliced
1/2 cup dried cranberries, chopped
1/2 tsp cinnamon
2 tsp fresh lemon juice
1/2 tsp vanilla
1/2 cup light brown sugar
1/4 cup + 1 tbsp granulated sugar divided
1/8 tsp sea salt
3 tbsp corn starch
1 tbsp unsalted butter cut into small pieces
1 large egg, beaten
Directions:
Line baking sheet with parchment paper
Flour work surface and place the refrigerated dough disk onto the flour
Using a rolling pin, roll the chilled dough into a circle (turning and flipping the dough as needed to prevent sticking) until the circle measures about 14 in wide and 1/8 in thick
Transfer to baking sheet and chill for 30 min
Preheat oven to 400 degrees Fahrenheit
Add apples, cranberries, cinnamon, lemon juice, vanilla, light brown sugar, 1/4 cup sugar, salt, and cornstarch and toss fruit until evenly coated
Mound the fruit in the center of the dough, leaving a 1 1/2 in border
Fold the border up and around the fruit, pleating if desired, leaving the center open
Brush the top of the dough with beaten egg and sprinkle with remaining tbsp of sugar
Bake galette for 40-45 min until crust is a deep golden brown and fruit is bubbling
Transfer to a rack to cool for 15 min
Serve with ice cream
