Buffalo Chicken Stuffed Sweet Potatoes

I love buffalo chicken dip, but with all the cream cheese and chips, it becomes really unhealthy really fast. Instead, I tried to make a dish that included buffalo chicken, with a healthy spin.

Combining one of my favorite starches, I made some delicious Buffalo Chicken Stuffed Sweet Potatoes!


  • 4 medium sweet potatoes

  • 1 lb chicken

  • Skinny Blue Cheese Dressing (recipe below)

  • Buffalo Sauce (recipe below)

Skinny Blue Cheese Dressing:

  • 1/2 cup blue cheese

  • 1 cup plain Greek yogurt

  • 1 tbsp white vinegar

  • 1/2 tbsp honey

  • 1 tbsp water- or more depending on how runny you like your dressing consistency

* Blend together to make dressing*

Buffalo Sauce:

  • 2/3 cup Frank's Red Hot Original Sauce

  • 1 tbsp unsalted butter (I used yogurt butter to make it healthier)

  • 1 1/2 tbsp white vinegar

  • 1/2 tsp Worcestershire sauce

  • 1/2 tsp garlic salt

  • 1 tsp cornstarch + 1 tbsp water


  1. Preheat oven to 400F. Line a large baking sheet with aluminium foil, place sweet potatoes on it and bake for 30 minutes or until tender

  2. Put chicken breasts in oil on a pan until fully cooked. When cool enough to handle, shred using two forks

  3. Combine hot sauce, vinegar, Worcestershire sauce, and garlic salt over medium heat. Add butter and whisk. When butter is incorporated, stir in cornstarch dissolved in 1 tbsp water. Whisk until sauce thickens, about 30 seconds

  4. Turn off the heat and add chicken

  5. Take the sweet potatoes out of the oven, cut them in half lengthwise and stuff them with shredded buffalo chicken

  6. Drizzle the dressing on top and serve!
