Blackened Tilapia over Sweet Potato Hash
Fish is a super healthy way to get protein and this just happens to be one of my favorite fish recipes! You can choose to make your own blackening seasoning, but to be honest one of my favorite quick ways to make this is by using Chef Paul Prudhomme's Blackening Fish Magic seasoning. It's flavorful, easy, and makes for some great fish!

Ingredients:
Blackening Seasoning-
1 1/2 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp pepper
1 1/2 tsp cayenne pepper
1 tsp cumin
Fish-
2 Tilapia filets (I buy mine frozen at Trader Joe's)
Potato Starch (corn starch can be used too, this is to make your fish dry out so it crisps in the pan)
2 Tbsp blackening seasoning
Olive oil
Sweet Potato & Zucchini Hash-
2 diced sweet potato
2 tsp paprika
1 tsp cumin
1 tsp chili powder
2 tsp cayenne pepper (if you want to add some spice)
2 tbsp olive oil
Agave
Directions:
Blackening seasoning-
Combine all seasonings together in a bowl
Fish-
Coat the tilapia filets evenly with potato starch and blackening seasoning
Heat olive oil in a medium pan and pan fry fish until cooked
Sweet Potato & Zucchini Hash-
Combine sweet potato with paprika, cumin, chili powder and cayenne
Pan fry in olive oil until cooked through and crispy
Drizzle agave lightly over top cooked hash
