Avocado, Tuna, Cucumber Salad
It's finally 2018! Time to buckle down and kill those new year resolutions! One of my resolutions is to overall eat healthier! So I decided to throw together a paleo type salad for lunch. Enjoy!

Ingredients:
1 cup of canned tuna
1/2 seedless cucumber, halved
2 avocados, diced
1/4 red onion, sliced
1/4 cup fresh cilantro, cut into small pieces
1 tbsp. fresh lemon juice
1/8 cup extra virgin olive oil
1/2 tsp. paprika
1/2 tsp. cayenne
Add salt and pepper to taste
Directions:
In a bowl combine the cilantro, lemon juice, olive oil, cayenne, paprika, salt and pepper
In another bowl combine the tuna, cucumber, avocado, and red onion
Drizzle the vinaigrette over the salad and toss
Enjoy!
