Have you ever tried replacing pasta with zoodles? I promise you won't be disappointed with the results! I usually stick with some basic pasta sauce, or my favorite Avocado Cream Sauce, but I tried a new Asian twist this time!
2 tbsp olive oil
Thai Almond Butter Sauce:
1/4 cup creamy almond butter (No Sugar/Salt)
1/4 cup reduced-sodium soy sauce
1 1/2 tsp sriracha, add more if you like spice!
2 tsp sesame oil
1 tsp garlic powder
1/4 tsp ground ginger
Spiralize zucchini and set aside
Whisk together all all sauce ingredients and set aside
Add olive oil to a large non-stick skillet set over medium heat. Add zucchini noodles and let cook for about 4-6 minutes, stirring frequently
Once noodles have softened and are tender, remove skillet from heat and drain excess water
Stir the noodles and sauce until the noodles are evenly coated
