Paleo Meatballs with Tomato Cream Sauce

When it comes to pasta, I am a huge tomato cream and meatball fan. So when I am craving this number and doing the Paleo diet, this recipe is an easy substitute!

Ingredients:

Meatballs:

  • 2 lbs lean ground turkey

  • 2 tbsp italian seasoning

  • 1 egg

  • 1 tbsp parsley

  • 1 tbsp salt

  • 1 tsp pepper

  • 1 tbsp oregano

  • 1/2 tbsp crushed red pepper

  • 1 tsp garlic powder

Sauce:

  • 2 tbsp olive oil

  • 1 yellow onion, diced

  • 1 tbsp minced garlic

  • 1 (28z) can crushed tomatoes (can omit these and use your favorite canned tomato sauce)

  • 2 tbsp tomato paste (can omit these and use your favorite canned tomato sauce)

  • 1/3 cup of lite coconut milk

  • 1 carton of baby bella mushrooms

Directions

  1. Preheat oven to 400F

  2. Mix turkey, egg, and seasonings together in a bowl

  3. Form meatballs with meat mixture and place each meatball in the slots of a muffin tin

  4. Bake at 400F for 20 mins or until fully cooked

  5. To make the marinara sauce, add the olive oil, mushrooms, and chopped onion to a pan at medium heat and cook until slightly browned

  6. Add garlic and stir for about 30 seconds

  7. Add crushed tomatoes, tomato paste, and 1/4 tsp of salt and simmer for 10 mins on low heat (can just add canned tomato sauce if you would like)

  8. Add coconut milk and additional salt and combine

*Serve with pasta or zoodles!
