Paleo Meatballs with Tomato Cream Sauce
When it comes to pasta, I am a huge tomato cream and meatball fan. So when I am craving this number and doing the Paleo diet, this recipe is an easy substitute!

Ingredients:
Meatballs:
2 lbs lean ground turkey
2 tbsp italian seasoning
1 egg
1 tbsp parsley
1 tbsp salt
1 tsp pepper
1 tbsp oregano
1/2 tbsp crushed red pepper
1 tsp garlic powder
Sauce:
2 tbsp olive oil
1 yellow onion, diced
1 tbsp minced garlic
1 (28z) can crushed tomatoes (can omit these and use your favorite canned tomato sauce)
2 tbsp tomato paste (can omit these and use your favorite canned tomato sauce)
1/3 cup of lite coconut milk
1 carton of baby bella mushrooms
Directions
Preheat oven to 400F
Mix turkey, egg, and seasonings together in a bowl
Form meatballs with meat mixture and place each meatball in the slots of a muffin tin
Bake at 400F for 20 mins or until fully cooked
To make the marinara sauce, add the olive oil, mushrooms, and chopped onion to a pan at medium heat and cook until slightly browned
Add garlic and stir for about 30 seconds
Add crushed tomatoes, tomato paste, and 1/4 tsp of salt and simmer for 10 mins on low heat (can just add canned tomato sauce if you would like)
Add coconut milk and additional salt and combine
*Serve with pasta or zoodles!
