Blueberry Coconut Breakfast Bake
I love some good breakfast, especially one you can make ahead for the week. This Blueberry Coconut Breakfast Bake is super simple, has clean ingredients, and will be sure to fill you up in the morning!

Ingredients:
2 cups unsweetened coconut flakes
3/4 cups of chopped pecans
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
3 eggs
1 cup unsweetened vanilla almond milk
1 ripe banana, mashed
1/8 cup coconut oil, melted
2 cups of blueberries
Directions:
Preheat oven to 350 degrees F and grease a 8 in pan
In a large bowl, mix all dry ingredients together (coconut flakes, pecans, cinnamon, baking powder, and salt
In another bowl, whisk together eggs and milk. Next add coconut oil and mashed banana
Mix the wet and dry ingredients together and add blueberries
Bake for 40 mins or until top is firm
Top with dried fruit or peanut butter!
