Healthy Blender Muffins

Muffins that are easy AND perfect for breakfast, lunch, or dinner! No added sugar, butter, or oil, these muffins are amazing in taste and good for you!

Ingredients:

  • 2 cups oats

  • 2 large ripe bananas

  • 2 eggs

  • 1 cup plain greek yogurt

  • 2 tablespoons honey

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp vanilla extract

  • 1/8 tsp salt

  • 1/2 cup mini chocolate chips

  • 1/2 cup chopped pecans

Directions:

  1. Preheat oven to 400 degrees F and lightly grease muffin tin

  2. Place all ingredients, besides chocolate chips and pecans, in a blender and blend on high until batter is smooth and oats have broken down almost completely

  3. By hand stir in chocolate chips and pecans

  4. Divide batter among the muffin tin, filling each 3/4 of the way

  5. Put in oven and bake for 15 mins or until tops are set

  6. Cool for 10 mins and serve!
