Summer Corn Salad
The most refreshing side for a BBQ and it pairs well with any grilled meat! Serve chilled!

Ingredients:
3 Tbsp red wine vinegar
1 Tbsp water
1 Tsp honey
1/2 tsp salt
1/2 red onion
8 ears of corn
20 halved grape tomatoes
2 diced avocados
2 Tbsp chopped cilantro
1 Tbsp chopped basil
Directions:
Whisk red wine vinegar, water, honey, and salt in a bowl
Add red onion and toss, let sit for 20 mins
Brush ears of corn with olive oil and grill over medium-high heat until charred
Let cool, then cut off the kernels
Add to the onion along with the sliced tomatoes, diced avocado, cilantro, and basil and toss
Season with salt and pepper
